Our Story

Inspired by New York and Philadelphia style pizza, Chef-Patron Michael Clay spent months working on a special, cold-fermented dough recipe full of flavour from British heritage grain flour. The Dokes pizza is crispy, with a crust for dunking in dips but not soft like the traditional Neapolitan style. ABOVE ALL, IT’S DELICIOUS!

We use BRITISH HERITAGE GRAIN flour, local cheese from the Crafty Cheeseman, Isle of Wight tomatoes, Wharfe Valley rapeseed oil, exquisite CURING REBELS charcuterie from BRIGHTON and we also work closely with Cinderwood Market Garden in Cheshire utilising the freshest, seasonal produce available throughout the year.

Dokes Pizzeria was born in April 2021 as part of the Society food hall in Central Manchester. THEIR FIRST STAND-ALONE RESTAURANT IS NOW OPEN, IN PRESTWICH.
